Supper at Fifty Seven: Heritage flavours of Singapore

Following on from the success of their first edition that featured Chefs Rishi Naleendra and Andrew Walsh and Sun Kim, the latest Colombo Supper Club will feature the creations of Singaporean chef Damian D’Silva.

The event will be held at 7.00pm on the 20th and 21st of May at Fifty7, at the new Jetwing Colombo Seven.

Chef Damian D’Silva is devoted to protecting the unique jigsaw that is Singapore’s culinary heritage. The nation state has a history, and a cuisine, that speaks of influences from across the globe, reflected in the creations at D’Silva’s restaurant, ‘Immigrants’. D’Silva went from being an aviation industry engineer in America to a chef after training in Italy and France. Add this to his Portuguese and Peranakan ancestry to understand D’Silva’s dedication to celebrating diverse flavours and origins.

Chef Damian serves up dishes from the major ethnicities of Singapore – Chinese, Eurasian, Indian, Malay and Peranakan. The small plates were commonly eaten at homes but are fast disappearing today. Each dish has a story to tell; however most restaurants don’t serve them and others don’t take the same painstaking effort to prepare them as chef D’Silva does. Pairing heritage dishes served ‘tapas’ style with an eclectic range of beverages curated by Wineworld, Colombo Supper Club #5 aims to create a complete experience of dining, history and urban lifestyle.

Naserah Tyebally, the founder of the Colombo Supper Club, is a Singaporean and passionate foodie eager to enhance the concept of dining out in Sri Lanka. She is a lawyer by profession and an avid traveller, eager to use her multiple platforms to forge stronger links between the global culinary world and Sri Lanka. For these dinners, she personally curates innovative wining and dining concepts, inviting internationally reputed chefs with a bold repertoire and presenting them to discerning diners.

Colombo Supper Club aims to put Sri Lanka on the map of entertaining and creative gastronomy. Its hopes to both showcase the best of global culinary talent to Sri Lanka as well as nurture local chefs in their explorations of food.
