The newly opened Sapphire Dragon is where Cantonese cuisine meets fine dining, with each dish taking you on an immersive journey through culture, artistry and taste from the first bite to the last. Located on the 23rd floor of Cinnamon Life at City of Dreams, the restaurant with sweeping skyline views sets the stage for a celebration of Cantonese heritage, reinvented with modern techniques.

At the heart of this culinary gem is Chef Maxwell Deng Chengwen, a master of Chinese fine dining whose reputation spans over 25 years across the globe. Born in Zhanjiang, Guangdong – a region celebrated as a cradle of Cantonese flavours – Chef Deng has carried his passion for authentic Chinese cuisine into the world’s most prestigious kitchens, from Hyatt and Park Hyatt to Sheraton and Jin Jiang International Group. His mastery lies in taking time-honoured traditions and reimagining them with a fresh, contemporary flair, always rooted in seasonality and the finest ingredients.

The menu at Sapphire Dragon features light and playful starters, such as Marinated Cherry Tomatoes with Plum and Wine Jelly, or the zesty Chilled Okra, dressed with Wasabi, Thai Chilli, and Chinese Black Vinegar.  From there, sample Crispy Roasted Chicken, a signature of the Cantonese barbecue style, or opt for vegetarian delicacies such as Braised Doufu with Bamboo Fungus and Mushrooms.

Seafood, always a highlight in Chinese fine dining, takes centre stage with dishes like Wok-Fried Prawns with Celery and White Shimeji Mushroom, and the indulgent Crab Meat Fried Rice with Egg White and Scallop, a luxurious take on a comforting staple. Guests can also have their seafood specials tailored to their taste.

No Cantonese feast is complete without a touch of sweetness, and Sapphire Dragon ends the journey with flair. The Mango Cream with Sago, Passionfruit, and Snow Gum is a tropical delight – silky, refreshing, and the perfect finale to an extraordinary meal.

Sapphire Dragon is open for lunch from 12 noon to 3 p.m and dinner from 6.30 p.m. to 11 p.m. with reservations recommended.
