Natasha Fernandopulle sits down with the young founder of the Butter Boutique to discuss her latest venture and passion for cooking

“I can spend hours at a supermarket or a place that serves food, rather than shop for clothes!” says Rukshi Nethicumara (26) who is an ardent “foodie” and loves to try out new restaurants and has a passion for sweets. “Whenever I am stressed out I cook – it’s like my de-stress agent,” she quips and says she has been someone who has loved to cook since she was 13 years old.

Rukshi, upon request from her friends would always whip up something if they would call and tell her they were to come over and it was through them that she drew the inspiration to open up Butter Boutique.

I set out from my office on a rainy morning to Battaramulla where Rukshi bakes her yummy goodies and when I walked in to her home, the aroma of chocolate was in the air… When sinking my teeth into one of the triple choc cupcakes which has a delicious chocolate mousse filling and a creamy chocolate frosting, I realised that the ride in the tuk tuk in the pouring rain was absolutely worth it!

This sinfully delicious cupcake along with seven other flavours of cupcakes as well as cookies, cakes and desserts are baked at home by Rukshi. You must order a day ahead as they are baked for that day only and from that first bite, you know you are tasting a fresh cupcake.

With the cupcake craze having hit Colombo what is unique about the cupcakes you find at Butter Boutique is the fact that they have fillings in them. They are baked using only local ingredients including vanilla beans from Kandy and she doesn’t use artificial flavours but the actual fruit to flavour these delightful treats. “The cupcakes are like a three layered cake,” Rukshi says, adding, “I use a butter cream frosting so it is not overly sweet,” and goes on to explain that the frosting is very simple with no frills.

“I use fresh small strawberries as well as passion fruit and lime,” she says adding, “These cupcakes are an adult size.” You actually have to bite in two or three times to finish these dessert cupcakes which are absolutely gooey and filling.

So how did Rukshi come up with the idea for a filling… Well she wanted her cupcakes to be unique and while she was experimenting in the kitchen one of her cupcakes fell apart instead of putting it aside, she slathered some peanut butter in the middle and tried it out and realised it wasn’t half bad. She then tried these filled cupcakes on her friends and received a very positive response, so she thought she should give it a try and this was the birth of the fillings in the Butter Boutique cupcakes.

“It was my best friend Andre who came up with the name and since everything I make is with butter in it, it made perfect sense, and it’s catchy too,” Rukshi says.

“For now I like the idea of doing it from home so I can maintain the freshness and the quality of the goodies I make,” she explains adding that when placing an order it has to be four of a particular flavour.

"I came up with the flavours as they were the flavours that I love to eat!” which range from tiramisu (a vanilla cake with a filling of chocolate cake crumbs and tiramisu and a mocha butter cream frosting) to one of my favourites, the red velvet delight (a crème brulee custard filling with a vanilla frosting).

If you are adventurous with fruity flavoured desserts, then a must try would be the passion fruit cupcake (a vanilla cake with a passion fruit curd filling and passion/vanilla frosting) Yum!

For the cookie monsters in you, Butter Boutique has some well known combinations like double chocolate chip cookies to the interesting Snickerdoodles (cinnamon sugar cookies) to chewy oatmeal and raisin as well as choc-crinkle cookies and chocolate chip cookies.

“One of my most popular treats is caramel popcorn,” Rukshi says and for someone like me, who doesn’t quite like caramel, I must admit, I couldn’t stop nibbling on them. Butter Boutique also has muffins and pies on the list as well as cinnamon rolls with cream cheese frosting.

And these sweet treats, when ordered are placed in a chic black box with a yellow ribbon with the yellow Butter Boutique logo.
