Sri Lankan American Chef and Culinary Entrepreneur based in the US Chalaka Disanayake better known as ‘Chef Charles’ is the recent winner of the highly coveted U.S National Food Experiments 2012 Tour.
This was an Annual National Cooking Competition sponsored by the Brooklyn Brewery.

The World Series, Super Bowl, Stanley Cup of cooking competitions took place on Sunday, December 16, at Brooklyn Brewery Headquarters in Williamsburg New York City.

The co-hosts for the event Theo Peck and Nick Suarez travelled all around the U.S. hosting 14 cooking competitions in major cities to find ‘the most creative, precise and fantastic chefs in America’. Each Food Experiment cook-off had a special theme.

The only rule of the day was to create the perfect bite with the ultimate goal of culinary glory. The judges for the finale included some of the top culinary experts in the world such as Andrew Knowlton of Bon Appétit; Colman Andrews, co-founder of Saveur; Garrett Oliver, Brew master at the Brooklyn Brewery; and Noah Bernamoff owner of Mile End.

The Judges Grand Prize Award went to New York City’s very own ‘Chef Charles NYC’, for his ‘Jewel-Encrusted Shrimp’.

Competition winner Chef Charles, a Restaurant Consultant, chef and owner of One World Kitchen created this first place dish of shrimp crusted in pistachios, cashews, wasabi peas, fresh herbs, panko that sat on a beef-kaffir lime and lemongrass curry in a hand-made crisp painted with Persian black limes. It seems like a lot going on, but it all worked to perfection! (Quote from Food Republic -http://www.foodrepublic.com/2012/12/17/our-top-5-dishes-food-experiments-national-champio )

Chalaka Disanayake has been branding himself as ‘Chef Charles NYC’ and is known in Sri Lanka for setting up the ‘Soho Bistro’ that generated quite a culinary buzz when it was opened at the Park Street Hotel in Colombo Sri Lanka a few years ago.
