‘Bombay Borough’, an all-day Indian Bar and Eatery known for emphasising hyper local and regional Indian cuisine, launched its innovative and skilfully crafted food and beverage menu recently. Located at One Galle Face (OGF), Bombay Borough offers a unique dining experience that artfully fuses heirloom Indian recipes with a progressive flair, global techniques and modern trends.

The new menu showcases dishes from across India presented with a modern spin, alongside a bar menu offering nostalgic favourites and creative concoctions, taking you on an armchair trip across the regions of India.

Chennai Crab Roti

Experience a burst of flavours with the Starts, featuring Garlic Chutney Potatoes – Maharashtrian-style tempered potatoes topped with garlic and chilli. Indulge in Naga Ghost Pepper Wings, and dive into the flavours from the northeastern state of India.

From the Northern part of India, guests can indulge in dishes such as Punjabi Dhaba Chicken – a robust chicken dish inspired by the roadside Indian ‘Dhabas’, and Amritsari Shrimps – succulent prawn pakoras infused with carom seeds and coriander, served with a refreshing mint chutney.  Inspired by the heirloom recipes and ingredients from the Southern regions of India, the menu features classics such as the Chennai Crab Roti laced with rich flavours from the streets of Chennai. Malai Chicken Roast spiced with Tellicherry black pepper and the Toddy Shop Fish Curry pay a hearty ode to the aromas of local South Indian food.

The menu also boasts a selection of flavourful biryanis, including the Butter Chicken Biryani – roasted pulled tandoori chicken with spicy makhani sauce served with raita, and the Prawn Roast Biryani – spiced prawns and saffron rice served with raita.

To complement the culinary offerings, ‘Bombay Borough’ presents an enticing array of beverages. From the bar, guests can enjoy the Darjeeling Dream – a gin cocktail infused with Darjeeling tea and the KAAPI G&T – a gin and tonic enhanced with rich notes of coffee. The bar also offers refreshing sangrias like the Galle Face Glow – with white wine and pineapple, and the Jaffna Grapes Sangria – a classic red wine sangria elevated by the sweetness of Sri Lankan Jaffna grapes.

For a sweet conclusion to the culinary journey, guests can indulge in the Flourless Dark Chocolate Bar – a chocolate bar topped with vanilla ice cream, toasted nuts, and miso caramel sauce, offering a subtle burst of umami notes. The Rose Falooda – a rose-flavoured traditional Indian dessert with jelly, vermicelli, and topped with vanilla ice cream – provides a refreshing and indulgent finale.

Aloo Tikki Chaat
