The multi-cuisine restaurant ‘Flow’ at the Hilton Colombo Residences was declared opened last week with a grand ceremony. ‘Flow’ is an all-day dining, with an open kitchen concept that is a first of its kind in Sri Lanka, with seating for 168 guests.

‘Flow’ promises cuisines from around the globe with private dining rooms and a chef’s table with a personal chef, for hosting memorable dining experiences. One of the unique traits of this restaurant is that it allows guests to watch their meals being prepared by chefs in the five open kitchens in a contemporarily-designed space.

The all-day dining is open daily, serving favourite cuisines such as Asian and selected Western ones. An extensive range of premium wines is also available at the restaurant. Flow’s A-La-Carte menu will also be made available soon, offering signature dishes.

At present, the popular lunch and dinner buffets are priced at Rs. 2,650/- nett and Rs. 2,900/- nett (per person), respectively. Much sought out ‘Sunday brunch buffet’ will be the latest addition to the ‘Flow’ in early September.

All designs were inspired by similar dining concepts present with Hilton hotels in the Asia Pacific region and brought to life by a Singaporean design agency, TID Associates. The bright and airy ambience in ‘Flow’ is perfect for family, leisure or hosting a business meeting over a meal.

Speaking of the investment, Karim Schadlou, General Manager said, ‘Flow is a one of a kind restaurant, we have ensured that the interior is contemporary and resonates with the international dining standard that Hilton is known for. Since its soft-launch in July, I am proud to say that we have received nothing but excellent feedback’.

Schadlou also mentioned that emphasis will be made on the quality of food, servicelevels and ambience to ensure its success.
‘Flow’ is already on its way to paving itself as a destination for dining by the cuisine offered by the hotel’s Executive Chef Priyal Wijesuriya. The open kitchens include a Chinese wok, Tandoori oven and Zesti oven, perfect for meat lovers.

Wijesuriya, who has played an integral part since its design phase said, that his ‘kitchen Team’ is very passionate about the restaurant and enjoy the vivid offerings served from the five open kitchens. ‘We will offer some of the favourite cuisines such as Japanese, Chinese, Indian and Sri Lankan; we have already established ourselves as a favourite for local cuisine’ he added.

When asked what the signature dishes of the restaurants are, he recommends the ‘Blue Water Prawn’ and ‘Melon Cocktail’, ‘Cream of Murunga Soup’, ‘Colombo Roast Chicken’, ‘Beef Casserole’, and ‘Jackfruit Ravioli’. With desserts, Wijesuriya specifically mentioned that the range of desserts has lower amounts of sugar to enhance flavours, and the signature desserts are ‘Ice Cream Kottu’, ‘Passion Fruit Parfait’ and the ‘Strawberry and Chantilly Cream’.
