Strawberry Sparkles

What you’ll need
• 1 pint fresh
strawberries
• 1/4 cup coloured sugar
• 4 ounces softened cream cheese
• 2 teaspoons
confectioners sugar
• 4 teaspoons milk
• 1/2 teaspoon vanilla extract

How to make it
Wash the berries and pat them dry with a paper towel. Fill a shallow bowl with coloured sugar
(you can buy this at the
grocery store or mix your own by stirring two drops of food colouring into
1/4 cup of sugar).

In a mixing bowl, blend the cream cheese,  confectioners sugar, milk, and vanilla extract with a fork until smooth and creamy. Add more milk if needed to achieve the desired consistency.

Holding the berries by their stems, your kids can dip them into the cream cheese mixture, roll them in the sugar, and enjoy.

Frozen Fruit Bites

A snap to assemble, these kid-size treats combine sweet fruit and a refreshingly tart heesecake-like filling.

What you’ll need
• 12 vanilla wafer cookies
• 1/2 cup vanilla yogurt
• 1/2 cup Neufchatel cream cheese, softened
• 1 teaspoon lemon juice
• 1 teaspoon honey
• Sliced kiwi, strawberries, or whole blueberries

How to make it

1. Place liners in a mini-cupcake pan. Put a wafer cookie, flat side up, in the bottom of each well.
2. In a medium-size bowl, whisk together the yogurt, cream cheese, lemon juice, and honey until smooth. Spoon 1 heaping tablespoon on top of each cookie, then top the mixture with the fruit.
3. Cover the pan with plastic wrap, then place it in the freezer until the fruit bites are firm, about 1 to 11/2 hours. Remove the tray from the freezer for 15 to 25 minutes before serving. Serves 12.
