Nihonbashi celebrates with Sashimi

On the 6 July, Dharshan Munidasa, founder owner of Nihonbashi Japanese restaurants in Colombo, presented a special sashimi dish of the most exquisite tuna fish named as “Ruby Ruby Sashimi” at a special press conference held at his flagship restaurant located at No 11, Galle Face Terrace, Colombo 3.

“Nihonbashi has always been ahead of the curve when it comes to restaurant design, creativity in foods and bringing to diners the cultural and gastronomical appeal of Japanese cuisine” says Dharshan who recently revolutionized the history of printed menu cards by placing Nihonbashi as the first restaurant in the world to introduce menu on Apple’s IPad.

The exquisite sashimi dish which was valued at US $ 56,000/ = [5 Million Yen] was not placed for sale but was prepared in celebration with Nihonbashi’s 15 years of service excellence in the restaurant industry - Inspired Fine Japanese Cuisine in the Land of Gems, Sri Lanka.

“Sri Lanka is a place where wild Tuna from the Indian Ocean can easily be complemented with red rubies from the mountains,” states Dharshan.

“Now I serve you rubies of the ocean – Tuna and Rubies from the mountains, Star Rubies to present “Ruby Ruby Sashimi” which is unique to Nihonbashi”.

The star rubies were frozen in an ice plate that carried the Tuna Sashimi of a Regal Tuna Landed in Sri Lanka. The seven star rubies which were used to prepare this dish weighted a total of 99.65 carats.
Sashimi, which is the Japanese term for sliced raw fish, with Tuna being the most popular among the various types of fish, is a delicacy eaten immediately after preparation. Dipped in soya sauce and wasabi, Tuna Sashimi is one of the most sought after Japanese dishes world over. And Sri lanka is one country with Wild Tuna being caught and graded in the city it self.

“Tuna in Sri Lankan waters is among the very best, provided the fish is acquired, stored, and transported in the best conditions. The best of the catch from Sri Lanka is exported to Japan, then to Europe, and the rest goes to the Sri Lankan market,” says Dharshan, who personally select every Tuna for his restaurants. “One large fish may cost as much as Rs.100,000 and more than 50% may be discarded as we use only the very best part of it,” he further stated.
