Old, familiar dishes with a twist

Rediscover Indian food at the Bombay Borough located at One Galle Face, which opened its doors on December 10. The restaurant, which can serve 100 people, with its high ceilings and white marble bar presented a modern take on décor with rattan ceiling lights and interesting curios as well as recipes and sayings like ‘A samosa will carry you through the day’ to whet the interest.

“Bombay Borough focuses on twisting old school recipes to suit today’s tastes. We use regionally-sourced ingredients from across India, like Aam Papad from Amritsar in the North, Pink Salt from the Himalayas, some unique Podi Spice mixes from Southern India along with Malwani Masala from the Konkan belt along the west coast of India. After much research and trial, the menu showcases ingredients from across India that are completely unique. Your culinary journey across a brand-new India begins right here, at Bombay Borough,” said Mrs Shikha Nath, Brand Director- Bombay Borough of K Hospitality Corp.

Some of the dishes that stood out were the Chilli cheese kulcha -mini kulchas (rotis) stuffed with chilli cheese and Chowpatty corn chat, made with tender corn, potatoes, ‘ilmil mirch’ chutney and crunchy peanuts. In addition the chicken Tikka Butter Masala, which had marinated spiced and charcoal-roasted chicken, in a rich punjabi ‘makhani’ sauce was something to go back for. For the dessert fanatics, the dark chocolate mess, with ice cream, homemade chocolate sponge, brownie crumble with caramelized nuts, and rich chocolate sauce was a fantastic final touch.
