CE LA VI stands for ‘C’est la vie’ in French meaning ‘This is the life’. The brand is internationally known for its iconic rooftop locations, innovative modern Asian cuisine, world class music and entertainment Soon to open in Colombo, CE LA VI has its presence at some of the greatest nightlife capitals of Singapore, Hong Kong and St. Tropez.

CE LA VI Colombo will feature a Japanese cuisine fine -dining restaurant and an indoor/outdoor lounge that will epitomize Colombo’s nightlife.

“We believe in enjoying life to the fullest at one of Sri Lanka’s most sophisticated nightlife and dining venues open to beautiful sea and sunset views. Colombo being at the centre of Asia’s emerging markets CE LA VI is excited to be in the city as the brand’s next iconic destination,” said its Manager Development Stephane Seguin.

Located at The Kingsbury rooftop the brand will be launched on July 28 promising a new level of sophistication to Colombo’s dining and nightlife.

At a media briefing held recently, Chairman of Hayleys PLC Mohan Pandithage, Managing Director of Hayleys Leisure and the Kingsbury Lalin Samarawickrama, CE LA VI Development Manager Stephane Seguin, Group Executive Chef- CE LA VI Joseph Sergentakis and CE LA VI Marketing Manager Francesca Way outlined their vision with the Hayleys Chairman stating, “The exciting partnership of The Kingsbury with CE LA VI will offer guests a sophisticated entertainment and a culinary destination which is totally new in Sri Lanka.”

Traditionally known for very strong flavours, Group Executive Chef Joseph Sergentakis aims to exchange ideas with local chefs and employ local spices to create the best of CE LA VI signature dishes.

Introducing CE LA VI in Colombo last month, Din Hassan, head Mixologist had developed an array of modern tropical cocktails that were carefully curated to match the local palate. Adventurous by nature, Din conceptualizes cocktails that engage the senses both visually and texturally, with the focus primarily on a seamless harmony of flavours.

The bartenders of the Kings Bar and Lounge in Kingsbury, watched in amusement as Din manned his station with ease and a skill set that could only come after years of practice behind the counter.

“It’s never about how much of ingredients you put in, rather it’s about what ingredients you put inside,” he said adding that less is more.

To Din, an important aspect of a cocktail is its appearance. “We want that first impression or experience to have a wow factor,” he says. This theory is in fact proven by his next cocktail, the ‘Celavi Cosmopolitan.’

‘Colombo Breeze’ is what Din dreamed up just two days prior to the launch. He combines Cloudy Sake with Monin Elderflower syrup, lemongrass, star fruit, fresh lime juice, simple syrup and egg white. The result is a creamy texture perfect for a gloomy day.

During his stay in Colombo Din also took the chance to explore spicy food which inspired him to create the ‘Spiced Cup’, which true to its name delivers a beautiful combination of alcohol and spice.
